VEGGIE GINGER LEEK SOUP
This is a go to recipe during the sick season:
- 1 bunch leeks or onion chopped
- 3 cloves minced garlic
- 4 carrots chopped
- 6 stalks celery chopped
- 1 C chopped zucchini
- 1 C green beans
- 1 C peas
- 1 C chopped tomatoes
- 1 bunch kale sliced
- 1 C almond or coconut milk
- 1/2 tsp rosemary and thyme
- 1 Tbls grated ginger
- 3 Tbls Real Salt
- Lemon pepper to taste
Place onion and garlic in bottom of soup pan and saute in 3 tbsp avocado oil until onions are tender.
Add other veggies except peas, tomatoes and kale. Saute until colors brighten.
Fill pot with good water and 1 C almond or coconut milk.
Simmer on med low for 15 min.
Add in kale, tomatoes, peas and seasonings.
Simmer 15 more min and Enjoy!
